Ingredients for the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Drink (makes 850ml, serving 10)
400ml decent vodka

150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Citrus Syrup: Combine the listed ingredients into a pan, bring to a simmer, mixing to dissolve. Next, take off the heat and leave to cool fully. Decant to a sealable bottle, close it keeping it in the fridge, it can be stored for up to four weeks.
For the Batch Mix: Pour the specified spirits and syrup into one sizeable container, allow it to infuse for one hour, then strain best through cheesecloth, to ensure it's fully clarified.
When ready to serve: Add 85ml of your cocktail base into your mixing glass packed with ice, gently stirring carefully for about 60 seconds to chill. Filter to a frosted cocktail glass or similar, top with some cranberries adding the final touch by giving it a quick spritz of the essential oil above the glass.
